jewel box of autumn veggies

The title is just about as creative as this recipe will get. I made this and I thought it was quite quick and delicious, and so I'm sharing here.

I don't normally measure a lot when I make food, so here's what I did:

Preheat the oven to 425F.

I chopped up:

1 sweet potato (peeled)
2 beets (peeled)
1.5 yellow onions (could be sweet onions)
10-12 baby potatoes (yellow and red, quartered)
4-5 cloves of garlic (smashed, roughly chopped)

Put all those babies in a large bowl and drizzle with about 1/4 cup olive oil. Mix and add about 1 tsp dried thyme leaves, 1 tsp dried rosemary leaves, 1/2 tsp dried parsley, a couple teaspoons of salt (I had to add more in the end), and 1/2 tsp pepper. Spread onto a baking sheet evenly. Bake at 425F for 40-45 minutes, until tender.

While this is cooking, I made some quinoa. It usually take about 20 minutes, and I made a lot so that I could meal prep, but when I dished my serving I used 1/4 cup cooked quinoa.

I put a handful and a half of mixed greens (I love arugula, spinach, and dark greens) in the bottom of a bowl, scooped the quinoa and some of the veggies on top. Just as many as you like.

I love sour cream, so I have a tablespoon or so of sour cream on it as well, but I think it could be good with some tahini dressing or aeoli of some sort. Just whatever you want, it's basically up for grabs.

Optional things: If you're looking for more protein, you can also add any meat to the bowl, or you can slice some kielbasa sausage into disks and bake on the tray with the rest of the veggies. You could probably add chickpeas too but I'm not for sure about that one. Another option for more green (especially if you don't have salad greens) is to add some chopped broccoli to the pan when there's about 20 more minutes left of cooking.

That's it! It makes a lot and keeps well, so this is a great recipe for meal prep. Here's some pics!
