I just wanted to pop on here really quick and share this guy because when Chris and I got home from school today I had zero motivation to make dinner and this took me a solid three minutes. So it's a great option when you don't want to cook, just make sure you have the ingredients (p.s. its only 5 ingredients!)
Unfortunately, this is not vegan and I have no idea how to make it vegan, but if you want to try something with this in a vegan version get to it! Good luck!
For one serving you need:
4 oz pulled chicken (Chris and I buy the costco rotisserie chickens and use those bad boys because they are cheap and there is not a lot of work to put into it)
1 wedge of laughing cow cheese (I used the garlic and herb, but I'm sure any would be dandy.
a handful of spinach
a pinch of seasoned salt
throw it into the microwave for 1 minute and then put salsa on top. (I used about 2 tbsp)
for one serving it is 223 calories, so if you are watching your calories this is a great dinner when you went a little over during breakfast and lunch.
AND its only 5g of carbs, so if you are watching carbs, you're welcome.
Nutrition facts:
223 calories
5g carbs
5.3g fat
36g protein
This is the picture I got of it. It looks like shredded chicken which doesn't always look super appetizing, but it tasted great, so don't let the picture ruin the dish!
